This Toronto-based boutique shortbread company is on a mission: to move beyond the gustatory gulch that is Christmas. As the company slogan has it, ‘Shortbread is for all seasons.’ Scottish-born McLeod has expanded her thirty-year old core business of handmade classic cookies to eleven flavours (including Shelf Life’s favourites Espresso Chocolate and Maple Crunch) available in hundreds of delightful shapes and packaged in handsome boxes, jars, and tins. All products are available on line, priced somewhere between premium and luxury. Meanwhile, in Shelf Life’s freezer, a handy package appeared of frozen mixed blueberries, blackberries, and strawberries. These went straight into the quick and easy Butterscotch Shortbread Crumble recipe on the package. Because the cookie fragments are already baked, the berries needed only a bit of flour and sugar in addition to the shortbread, and just thirty minutes in the oven. The resulting hot, tangy hodgepodge of crunchiness and squishiness was absolutely terrific, with the butterscotch flavour adding an extra dimension of wizardry. Next time Shelf Life will sprinkle granola in the crumbs for topped-up texture, before we advance to the cheesecakes. (Note: there are trans fats in this product. We’ve said it before and we’ll say it again: one would think that an artisanal, gourmet-type company would get in front of this issue, and find a way to address consumers’ concerns about trans fats. Just asking).
