At last, pancakes you can get your teeth into. This mix is made from fresh-ground organic heritage flour, so the results are far from the unnerving discs of fluff that commonly pass for flapjacks. The Toronto–based Grainstorm company – whose motto is ‘Bake Like It’s 1869’ – offer scone, cookie, pancake and muffin mixes that are proudly pre-industrial. This product’s nut-free ingredients include fresh whole ground organic spelt, kamut and oat kernels, and non-GMO baking powder. The mix is not a dump and stir experience; attention must be paid. The fresh ingredients – eggs, butter, olive oil, plain yogurt and milk – need careful blending. The batter is dense, so getting the right thickness on the griddle is tricky (dollar sized pancakes work beautifully). They taste wonderfully rich, with a substantial texture (we discovered one or two grain husks in the batter, which added to the general fresh-from-the-mill mouthfeel). Since we enjoyed the regular variety so much, Shelf Life went on to try one of the recommended recipes, Lemon Riccotta pancakes, which went down a treat for New Year’s Day brunch. Our verdict? Great taste; awesome history vibe; must remember to stock up on birch syrup.
